
Vegetable Stock Cubes
Carrot & Coriander Soup

Ingredients
4 Large Carrots, Chopped
1 Large Onion, Chopped
2 Garlic Cloves, Sliced
4 OXO Vegetable Stock Cubes
1 ltr Boiling Water
4 tbsp Fresh Coriander, Roughly Chopped
Method
Step one
Add all the ingredients (except the coriander) into a suitable pan.
Step two
Bring to the boil and simmer for 20-25 mins or until the vegetables are thoroughly cooked through.
Step three
Liquidise until smooth using a blender or food processor.
Step four
Return to the pan to heat through.
Step five
Add the coriander and stir.
Step six
Serve with a crusty roll.
