
Red Wine Stock Pots
Poached Pears in Red Wine & Vanilla

Ingredients
250ml Water
1 OXO Red Wine Stock Pot
150ml Smooth Orange Juice
150g Sugar
1 Vanilla Pod, Split
1 Orange, Sliced
1 Cinnamon Stick
4 Pears, Firm
Method
Step one
All but the pears, place the ingredients into a suitable sized saucepan.
Step two
Bring to the boil, stir well and bring to a gently simmer.
Step three
To prepare the pears, peel with a potato peeler, cut the bottom flat so the pear can stand up.
Step four
Place the pears in the cooking liquor, cook for approx. 20 minutes. Turning occasionally so they cook and colour evenly.
Step five
Once the pears are cooked, take off the heat. Leaving them in the cooking liquor standing up. When cool, remove the pears and chill in the fridge.
Step six
Sieve the liquor and reheat to a simmer, reduce until smooth and silky.
