Chicken Stock Cubes

Ingredients

2 tbsp Olive Oil
4 x Chicken Breast
Salt & Cracked Black Pepper
2 Garlic Clove, Crushed
1 tsp Chilli Flakes
3-4 Sprigs of Thyme, Leaves removed and chopped
125g Sundried Tomatoes, Sliced
1 x 500g OXO Signature Chicken Stock
150ml Double Cream
50g Grated Parmesan
Fresh Basil

Method

Step one

Heat olive oil in a non-stick saucepan over a medium-high heat.

Step two

Fry the chicken breasts for approx. 5 minutes on each side, and season well with salt and cracked black pepper.

Step three

Remove the chicken and set to one side.

Step four

Using the same pan, add a little more olive oil and gently fry the garlic, chilli flakes, thyme and tomatoes for 1-2 minutes.

Step five

Increase the heat, add the stock, double cream and parmesan. Stir well and return the chicken to the pan.

Step six

Gently simmer for 15 minutes, turning the chicken over halfway, cook until the chicken is cooked and the sauce has thickened.

Step seven

Garnish with fresh basil and tuck in.
