
Lamb Stock Cubes
Spiced Rubbed Roast Leg of Lamb

Ingredients
2 kg Leg of Lamb, Bone In
2 OXO Lamb Stock Cubes, Crumbled
1 tsp Cracked Black Pepper
2 tsp Sweet Smoked Paprika
3 tsp Fennel Seeds
2 tsp Ground Cumin
2 tsp Ground Coriander
2 tsp Dried Chilli Flakes
I Piece Fresh Ginger, Grated
4 Garlic Cloves, Crushed
1 Lemon, Zest and Juiced
3 tbsp Olive Oil
Method
Step one
Remove the lamb from the fridge 1 hour before cooking to let it come up to room temperature.
Step two
Make several long scores across into the lamb.
Step three
Combine the remaining ingredients in a mixing bowl, then massage into the lamb completely covering in the marinade. (This can be done in advance and chilled for several hours or overnight)
Step four
Preheat the oven to 200°C fan.
Step five
Roast the lamb for 30 minutes, then deduce to 180°C fan and roast for a further 40 – 45 minutes for medium-rare.
Step six
Allow to rest for 20 – 30 minutes for serving.
Step seven
Carve and serve with potatoes and mixed vegetables or salad.
