Jamaican Jerk Chicken Thighs with Pineapple

Ingredients
1 Jar OXO Jamaican Jerk Marinade
8 Chicken Thighs, Bone In & Skin On (1kg)
1 Medium Pineapple, Fully Prepped and cut into wedges
2 tbsp Unsalted Butter, Softened
1 tbsp Caster Sugar
Method
Step one
Preheat the oven to 170°C fan.
Step two
In a bowl, combine the chicken with OXO Jamaican Jerk Marinade and marinate 10 minutes at room temperature.
Step three
Place on a lightly oiled baking dish.
Step four
Cook for 35 minutes on the middle shelf of the oven.
Step five
For the pineapple, line a baking tray with baking parchment paper.
Step six
Mix the butter and caster sugar together, brush the pineapple with the butter mixture and place in the oven for 25 minutes.
Step seven
Serve the chicken with the pineapple and savoury rice
