Chinese 5 Spice Duck Legs & Cucumber Salad

Ingredients
1 Jar OXO Chinese 5 Spice Marinade
4 Fresh Duck Legs
1 tbsp White Wine Vinegar
1 tbsp Soy Sauce
1 Cucumber, Cut into small chunks
4 Spring Onion Thinly Sliced
½ Red Chilli, Finely Chopped
2 tbsp Fresh Coriander, Chopped
Method
Step one
Preheat the oven to 170°C fan.
Step two
In a bowl, combine the duck with OXO Chinese 5 Spice Marinade and marinate 10 minutes at room temperature.
Step three
Place on a lightly oiled baking dish.
Step four
Cover the tray lightly with foil and place on the middle shelf of the oven and cook for 80 minutes.
Step five
Remove foil and baste well.
Step six
Place back in the oven and baste several times for the remaining 20 minutes.
Step seven
Remove from the oven and allow to rest.
Step eight
For the cucumber salad, mix the vinegar and soy together, then toss with the cucumber, spring onions, chilli and coriander.
Step nine
Serve the duck with the cucumber salad and egg noodles.
