
Lamb Stock Cubes
Braised Lamb Shanks

Ingredients
2 Lamb Shanks
2 Sprigs of Rosemary
4 Sprigs of Thyme
2 Garlic Cloves, Crushed
1 Onion, Diced
20ml Olive Oil
2 OXO Lamb Stock Cubes, Crumbled
100 ml Red Wine
500ml Boiling Water
1 tbsp Tomato Puree
1 tbsp Cornflour, Mixed with a little water
Method
Step one
Score the lamb shanks several times.
Step two
Add the rosemary, thyme, garlic, onion, and olive oil to a bowl, mix well 3.
Step three
Cover lamb shanks in the mixture, leave in fridge for several hours or overnight.
Step four
Add the lamb shanks to a hot frying pan, seal until golden in colour.
Step five
Place the lamb shanks in a large saucepan.
Step six
Dissolve the OXO Lamb Stock Cubes in boiling water and pour into the saucepan.
Step seven
Add the red wine and tomato puree, cover and simmer for 2 ½ hours or until tender.
Step eight
Remove the lamb shanks and put to one side.
Step nine
Sieve the juices into a separate pan and thicken with cornflour.
Step ten
Serve with potatoes and mixed vegetables.
