Sausage & Lentil Casserole

What you need

Here are the essentials

  • 8 Cumberland sausages
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 400g green lentils, drained and washed
  • 20g vegetable oil
  • 4 sprigs of thyme
  • 2 bay leaves
  • 1 garlic clove, peeled and crushed
  • 2 Chicken Cubes
  • 30g tomato puree
  • 380ml boiling water

How to make it

Here's what you need to do

  1. Preheat the oven to 180°C
  2. Pan-fry the sausages for 5 mins on a medium heat
  3. Add the onions, carrots, thyme, bay leaves and garlic, then continue to cook for a few more minutes
  4. Make up the stock with 380ml of boiling water and the Chicken Cubes and add 30g tomato puree
  5. Add all the ingredients into an ovenproof dish with a lid, stir well and place in the oven for 45-50 mins or until the sausages are piping hot
