Leek & Potato Soup

What you need

Here are the essentials

  • 25g unsalted butter
  • 2 medium leeks, diced
  • 3 medium potatoes, peeled and cut into 2cm cubes
  • 1 OXO vegetable stock cube
  • 600ml water
  • 50g double cream
  • 1 Roast Garlic & Parsley Herbs & More

How to make it

Here's what you need to do

  1. Add the butter and leeks to a non-stick pan, fry until soft
  2. Add the potatoes, vegetable stock cube, water and Herbs & More
  3. Cover the pan and leave to gently simmer for 15 mins
  4. Add the cream and contents from the pan to a food processor, blend until smooth
  5. Return to the pan to warm the soup before serving
