Duchess Potatoes (NEW)

Chicken risotto

  • 1kg Peeled and Cut Maris Piper Potatoes
  • 2 Egg Yolks
  • 1 Egg (Whisked for Eggwash)
  • 50g Butter
  • 1 Bunch of Spring Onions (Thinly Sliced)
  • 2 OXO Vegetable Stock Cube


  1. Cook the potatoes in lightly salted water.
  2. Once soft, drain off the water, and return to a low heat to dry out the potatoes.
  3. Mash with a potato masher.
  4. Add the yolks, butter and OXO cubes and stir well with a wooden spoon.
  5. Place in a piping bag with a large star tube and pipe into spirals, about 3 cm in diameter and 5 cm tall. On to a lightly greased baking tray.
  6. Brush with the eggwash.
  7. Place in a hot oven at 200c for 10mins or until lighly brown.
