Coriander & Lime Chicken

What you need

Here are the essentials

  • 1 tbsp olive oil
  • 4 medium chicken breasts
  • 1 Chicken Cube
  • Zest and juice of a lime
  • 1 tsp chilli flakes
  • 1 tbsp coriander leaves, chopped

How to make it

Here's what you need to do

  1. Preheat the oven to 180°C
  2. Carefully cut through the chicken breast lengthways, cutting almost all the way through so it can open up into a butterfly
  3. Lay the chicken out and sprinkle the Chicken Cube, chilli flakes and coriander evenly onto each side
  4. Heat a large heavy-based frying pan over a medium-high heat and add the oil
  5. Add the chicken breasts and pan fry carefully for 1 min on each side
  6. Place onto a baking tray, and add the lime zest onto each piece of chicken
  7. Place in the oven for 6-10 mins until all the chicken is cooked through and piping hot
  8. Remove, squeeze over some of the lime juice and serve
