Cock-a-Leekie Soup

What you need

Here are the essentials

  • 2 leeks, washed and sliced
  • 1 carrot, peeled and diced
  • 1 stick celery, chopped
  • 20g long grain rice
  • 800ml water
  • 2 Chicken Broth Cubes
  • 1 tbsp fresh parsley, chopped
  • 100g leftover roast chicken
  • Ground black pepper

How to make it

Here's what you need to do

  1. Place the leeks, carrots, celery and water into a pan and crumble in the cubes
  2. Bring to the boil and reduce to a simmer for 10 mins
  3. Add the rice and continue to cook for 15 mins
  4. Add the parsley and chicken, then heat through
  5. Add black pepper to taste and serve
